Ardee Meets Spain: International Farmers Exchange Ideas at Callaghan’s

The early morning hustle at Callaghan Butchers in Ardee took on an international flavour this Friday as a group of Spanish beef farmers arrived for a unique cultural and culinary exchange.

Organised by Gerry Giggins of Irish Farm Tours, the delegation travelled from the province of Cáceres in Central West Spain. Specifically, the visitors hailed from La Cumbre, a village located near the Portuguese border renowned for its agricultural heritage.

Comparing the Cuts

The visit provided a rare opportunity for local master butchers and international producers to discuss the intricacies of their trade. The group engaged in a lively exchange of ideas, comparing how beef is reared and prepared in their respective countries.

While the passion for high-quality produce was a common language, the discussion highlighted several fascinating differences in how beef is butchered and consumed across Europe.

A brilliant morning of “shop talk” between those who rear the cattle and those who prepare the prime cuts for the counter.

The Mystery of the Missing T-Bone

One of the most surprising takeaways from the discussion involved the iconic T-Bone steak. Despite their region’s strong farming roots, the Spanish visitors revealed that T-Bone steaks are virtually impossible to find in their specific part of Spain.

The revelation sparked a deep dive into the different butchering techniques used in the Cáceres region compared to the traditional Irish methods practiced daily at Callaghan’s.

Strengthening Agricultural Ties

Visits like these, facilitated by Irish Farm Tours, continue to put Ardee on the map as a destination for agricultural excellence. For the team at Callaghan’s, it was a chance to showcase the quality of Mid-Louth produce to an international audience.

Safe travels to our friends from La Cumbre — a great exchange of ideas and a reminder of the global nature of the farming community!
